Carrot Spice Bread

Ingredients

- •1 tsp Baking soda
- •1 tsp Ground cinnamon
- •1/2 tsp Ground nutmeg
- •1/2 tsp Salt
- •2 piece Eggs (large)
- •1 cup Granulated sugar
- •1/2 cup Vegetable oil
- •1 tsp Vanilla extract
- •1 1/2 cups Shredded carrots (packed)
- •1/2 cup Chopped walnuts or pecans (optional)
Instructions

Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.

In a separate bowl, beat the eggs and sugar until light and fluffy. Gradually add the oil and vanilla extract, mixing until well combined.

Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
Time: 2 min - 5.
Fold in the shredded carrots and nuts (if using).
Time: 3 min - 6.
Pour the batter into the prepared loaf pan and spread evenly.

Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover loosely with foil.

Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
